As I told you yesterday with my Wine & Origami Night blog, I made some bomb Spinach & Artichoke Dip.
I'm not a huge cook when it comes to a full on meal, but I love checking out Pinterest for dips and desserts. The other day, I made a champagne dessert dip (future blog!) for "Night of Champagne-ions" with my girlfriends, and it was heavenly. It still didn't top my all time favorite though.
This Spinach & Artichoke Dip is SO insanely easy to make, and it's my absolute favorite. It's basically just mayo (I used a vegan mayo/dressing 2 times ago, and I think that was my favorite version TBH), artichokes, spinach (it says to use frozen, but I use fresh), garlic (I use more than it suggests but I'm also a big garlic lover), and Parmesan cheese (a heavy hand with this one too because CHEESE!).
I fully intended on taking a picture when it just came out of the oven and it was that delicious golden brown color, but then we all inhaled it.... so the best I could do was take a pic of the leftovers I ate in bed the next day (don't you dare judge me, Judy).
