Ridder's Q Club: Smoking Ribs

Does the smell of wood smoke excite you? Does it make your saliva glands begin to secrete? Do you love hovering over a fire watching meat being cooked to perfection. Then you are MY kind of people!

Whether it's smoking, roasting, baking, braising or grilling; with quality meats and some imagination, you can create some mouth water meals and memories with loved ones. As a barbecue addict myself I'm here to give you ideas to take your taste buds on a wild ride.

One of my favorite and go to cooks is pork back ribs. It's a delicious food and often what people first think of when they think of barbecue. The cook is relatively easy and takes about 8 hours from start to finish including prep time.

Here's quickly how I prep my back ribs.

First step is to remove the membrane from the back side. See how to do that below.

Once the membrane is removed I proceed to coat the ribs. Watch Below.

Then the ribs are placed back in the fridge for at least 4 hours and taken out an hour before cook time. Great to use the hour warm up time to also fire up your pit, or grill and get it up to temp.

To Cook:

  1. Fire up your smoker and bring the temp to about 235 to account for a bit of heat loss when loading.
  2. Load ribs bones down and cook at 225 for 2 hours. During second hour spritz them every 15 mins with apple cider.
  3. After 2 hours pull, and wrap in foil with butter and honey, then place back on smoker.
  4. Cook wrapped for 2 hours.
  5. Remove, unwrap and place back on smoker for another hour. You can now baste with a sauce every 15 mins or continue the apple cider spritz.
  6. Done! Pull off and let rest for at least 15 minutes before cutting into single ribs or 3 rib sections to serve.
