Fat Tuesday, appropriately named for the indulgent day before the celebration of lent, has long been associated with the Mardi Gras celebration. Probably because it doesn't get any bigger than Mardi Gras in New Orleans, which has the reputation for absolute debauchery. But that's not what it really is. In fact Mardi Gras isn't a day, it's a season! Here's everything you need to know about the history of the "real" Mardi Gras.

You don't have to be in New Orleans to celebrate Fat Tuesday this year. You can grab yourself a king cake and cook up a big batch of traditional Jambalaya. Ridder has family in New Orleans and shares the traditional recipe you can easily make at home.
