The easiest chicken Crock-Pot meal ever!

I'm a HUGE fan of the Crock-Pot.... except for the one that killed Jack on "This Is Us" but that's for another time (season 3 is this fall and yup, cried over this digital exclusive for it).

But we're not here to cry over Jack and the rest of the crew, we're here to talk about my favorite pastime.... and that's eating!

I found this super simple and very delicious recipe on Pinterest awhile back. It's basically just chicken, a jar of salsa verde (I get the one from Trader Joe's), tomatoes (you can get canned but I like to cut up a tomato and a half instead), and an onion (I'm not a huge onion fan so I just use half of one. Also, the recipe calls for putting it in at the end... my husband & I both prefer it actually cooking with the rest of the mixture the whole time). Add some spices and about 5 hours and BAM... you've got yourself some chicken for your meal prepping! I also make rice as a little filler on the side.

Here's a picture of it from the start... I didn't get a chance to take a picture of the final product because we dove in immediately. THAT'S how good it is!
