Grilled Rum-Soaked Pineapple Recipe

As we were drafting our favorite cookout foods to eat, I mentioned rum-soaked pineapple. We had a few people ask for the recipe - and it's really as simple as it sounds!

Soak your pineapple (I usually cut it in rings) in dark rum. I place the rings in a casserole dish and fill it with rum until it's about half way up the pineapple (about a 1/2 cup or so). Let it soak for at least 30 minutes (ideally, you'd let them soak the morning until you're grilling in the afternoon).

Once you're just about ready to grill the pineapple, take a large Ziploc bag, sprinkle in cinnamon and sugar (basically to taste), and place the pineapple in there. SHAKE, SHAKE, SHAKE!

Then, place them on the grill until they're heated! I like to burn 'em a little bit. I usually sprinkle some more cinnamon sugar on them after they come off the grill and serve with ice cream. It's delicious!
